Teriyaki Beef with Stir-fry Greens and Asparagus.

My whole family loves this simple stir-fry made with our own grass-fed beef, green garlic, asparagus, spinach, broccoli and carrots! Serve over hot steamed rice and make extra for a delicious lunch the next day! This is such a simple recipe that you can substitute any veggies that are seasonally available and abundant in your area. Sugar snap peas or snow peas, broccoli, pak choi, cabbages and other seasonal veggies make great additions to this recipe!

Thinly slice the green onions and green garlic. In a bowl, mix 1/4cup soy sauce or liquid aminos, 2TBS brown sugar, ground or fresh ginger and black pepper.

Choose high quality round steak, sirloin steak, flank steak or skirt steak. Thinly slice 1 to 1 ½ pounds of beef and marinate with green garlic, soy sauce, brown sugar, pepper, and ginger (if desired) for at least an hour in the refrigerator.

Select freshly harvested veggies for the best flavor and most nutrition! Wash and prep to add to the stir-fry pan. 4 cups of vegetables at least!

Stir-fry meat in hot pan until browned and delicious! Remove to a bowl and add longer cooking veggies to the hot pan. When half cooked, add the softer veggies (greens, asparagus tops, etc.) when cooked to crisp tender, add meat back to the pan and remove from heat. Serve over hot steamed rice of your choice.
